While eugenol is reminiscent of clovebud, dihydroeugenol smells more of bay leaves and pimento. Dihydroeugenol is brighter and more radiant than regular eugenol and it works wonderfully in combination with the same. For a lighter and slightly sweeter but dry spice note than Eugenol, Dihydroeugenol is an excellent choice.
