Honeyed facets emerge as it develops, contributing to that characteristic "red hots" candy quality that makes this material so immediately recognisable. This aromatic aldehyde comprises roughly 90% of cinnamon bark essential oil and defines the entire cinnamon-cassia olfactory family. The trans isomer predominates and delivers warmer, more authentically cinnamon character than its cis counterpart. Iconic oriental fragrances from Tabu (1932) to Opium (1977) relied on cinnamaldehyde to create their signature spice accords, working alongside eugenol, clove, and nutmeg for multi-dimensional warmth. Use cinnamaldehyde at 0.5–2% in oriental compositions, 0.1–0.8% in florals, and 0.2–1.5% in masculine woody-spicy accords. Above 2%, the spice character overwhelms. It introduces fascinating warmth when used discretely in rose and hyacinth bases.
